Sadly Ninny the mother of the first twins born hasn't made it. We are not sure why she got sick it was very sudden and after talking to my local vet, she said it could of been a few different things from milk fever to snake bite. So far the babies are going fine Ninny's twins ( Sugar and Spice) have adopted Petal as there mother even if she isn't keen on the idea. I am bottle feeding them and they also sneak feeds of Petal in between feeds.</span><br />

<span style="font-size: large;">Lately the weather has been wild, with Monday afternoon been the highest we have ever seen the creek. As you can see in the photos below the dry creek bed which is always dry was flooding. By Thursday the creek was back down and the dry creek was dry again. The Goat paddock is down in 4 places. Luckily over Christmas the veggie patch fence finally went up, so the goats are in there till there paddock is fixed. Clover (the kid/baby goat) has grown she is huge, so she is been weened from Moonie. So far its going well. I am still milking, Ebony had a still born in November an she is my main milker now. She is a bugger to catch but is great to milk. I am milking her twice a day and get roughly 1.2-1.5 litres each milking. </span></div>

Two days into milking and all is going great. Clover ( the baby) is also going great though she does seem to favour one side more then the other so I am making sure I take more out of the other side when I am milking. My milking process is quiet simple I don't even have a milking stand. We have a small meat house behind our house and this is where I store all the animal food. So what I do is around 8.30 am ( this is when i get back from the school bus drop of) I take Moonie up to the meat house shut the door behind us so she can not get out and place a bucket of feed in front of her. She is quiet happy to just stand and eat I then give her teats a quick clean, strip the first little bit of milk out then away I go. Moonie isn't a friendly goat when out in the paddock she will only come to you if you have a bucket of feed, so it has been a huge relief that she is so easy to milk. I am only milking her once a day and the Clover has access to her 24/7. So far I seem to be getting just under 2 litres of milk a day ( 2 quart jars full) which is plenty for us, for our day to day needs and for me to start making some cheese. So be warned there will more then likely be a few cheese making post coming soon.</span><br />

<span style="font-size: large;">Its so exciting. I had a feeling Moonie ( that's the doe) was pregnant but thought that she wasn't that far along. On Friday night around 10 pm I heard a funny sound outside and thought it was a fox, as we have been having a bit of problems with the foxes. Instead of it been a fox there was two tiny little kids. As soon as I looked at them I could see one was a lot more alert and active then the other but I assumed that the more active one was the first born. I dried the little boy of and left them with there mum. The next day the little boy still wouldn't stand, I gave him some milk but he wouldn't suck. Sadly we had to make the decision to put him down as after two days he still showed no sign of having any sucking reflex's and he still wasn't standing. So far this experience has been a mixture of emotions. Trying to reason with Lincoln has been the hardest, he is really upset by it all. However we now have one beautiful little girl kid that the children have named Clover and we also have fresh goats milk.</span><br />

Three Does, one Buck and one Kid ( which is also a boy). So far they are settling in great they are very calm and quiet. They are all Anglo Nubians, which is a milking breed. So including Ninny I will have four does I can milk next year. </span><br />

More then once I would of loved to have had a pause button.</span><br />

Rob and I left the kids with family and headed to Qld for Emma and Clayten's Wedding which both me and rob were apart of so I don't have any photos of the wedding. We spent two nights on the way up near Bundarra fishing and chilling and on the way home we spent two nights at Coffs Harbour with the kids and family. </span><br />

I have had attempted this a couple of times in the past, the best I achieved was a funky smelling goop that did not result in anything. This time around I borrowed The River Cottage Handbook No 3 - Bread from my local library. The only thing I have did different this time around to in the past was I used my Kenwood mixer to mix the batter for 10 min as was suggested in the book. The results while the weren't instant, they were obvious over the first week. I started by mixing 1 cup spelt flour with 1 cup of water and mixing with food mixer for 10 Min's then this step was repeated every day for the next 7 days and each time I would take half the starter out ( its great to add when making piklets, you don't need to waste it). I didn't always add 1 cup some days was half a cup, from what I have read it doesn't matter as long as it is equal volumes of water to flour.</span><br />

That was until I got home. Depending on how you want to look at it, 3 boxes equals 30 kgs of Roma tomatoes, 1 day slaving in the kitchen or 46 jars of final product. Using a <a href="http://dreamingofagardenutopia.blogspot.com.au/2012/01/fig-jam.html">mincer</a> to separate the skin an seed made a huge difference time wise, I would hate to think how long it would of taken me if I had to do it all by hand. All the onions an garlic added was from my garden and thanks to this the total cost was $45. So while it was a long day making all the sauce then bottling it, it was well worth it. </span><br />

I refuse to buy any fruit and vegetable either fresh or in cans that are imported.</span><br />
<span style="font-size: large;"> Tricia over at<a href="http://www.littleecofootprints.com/"> little eco footprints</a> is doing a great challenge this yr where they have decided to <a href="http://www.littleecofootprints.com/2012/01/skipping-supermarkets-shopping-malls-and-super-chains.html?utm_source=feedburner&utm_medium=feed&utm_campaign=Feed%3A+LittleEcoFootprints+%28Little+eco+footprints%29">skip the supermarkets</a> for a year. I would like to think that by preserving fruit and vegetable myself I am slowly going to get to a stage where I am organised to join in on the challenge. Even though I prefer to buy fresh in season fruit, both my kids eat a lot of it an I want to have a variety preserved for when winter comes around and I can only get apples and oranges in season. So far I have 10 jars of peaches and a ton of homemade fruit roll ups which mainly consist of plum or peach. So next on the list was pears.</span><br />

Ever time I try a new canning recipe I only do a small amount so that we can the open a jar in the first wk and see how we like the final product an if its thumbs up them the aim is to go ahead an make more. As different fruits are coming into season my aim is to preserve anoth so that we don't have to by said fruit or veg out of season.</span><br />

But now I know for next time to pack them even more. I have no idea why they took on such a pink/ peachy colour when I water bathed them but I think it looks pretty. I was impressed with the results from the 2.5kg of pears we got 8 jars, though I am sure if I had packed them better it would of only been 6. Most importantly the taste, the kids loved them they finished of a whole jar in one setting.</span><br />

Yep I will admit this is a new one for me. I normally freeze it but there just isn't room atm. I don't really follow a recipe for the stock I had four young roosters that needed the chop. So that's what I used but you can use the carcases from a roast chicken. I added a heap of pickling onions as that's what I had from the garden and some crazy looking carrots again from the garden. You can also add celery if you have any. Cover with water then bring to the boil, reduce heat and simmer for at least 4-5 hrs I find the longer the better as you get a more intense flavour.</span><br />
<span style="font-size: large;">Let cool and skim of any fat on top then drain through a colander. Using cheese cloth is good for when you drain as you get a clearer stock. Then pressure can. Any food to be put in jars that has meat in it needs to be pressure canned. I followed the instructions which came with my pressure canner and it involved canning for 20 min. The result was 15 jars of stock and leftovers was used to make a soup, all the meat was shredded some for future meals and also for the soup. </span><br />

<span style="font-size: large;">The<a href="http://www.cookingbread.com/classes/class_pesto_bread.html"> Pesto Bread </a>is easy and turns out great every time, its my all time favourite an I have been using the recipe for over a yr now. It is very versatile and you can really add anything you want instead of pesto. The kids love bacon and cheese or Vegemite and cheese and homemade pasta sauce an cheese.</span><br />

I ordered these through the <a href="http://www.ozfarmer.com/">Ozfarmer </a>site and they were great to deal with. Part of the reason I got so many cases of jars was they discount when you order 10 + cases. I went mainly for the pint size which is 437ml as I find this is a size that suits my family the most, I find anything smaller is ok for jams but not for sauces and stock as you then need to open two jars at once. The larger jars are quart size which is 950 ml and is perfect for soups and for whole fruits as well. The brand of jar you use depends on what you are preserving, I find that reusing jars from the shops are great for jams but I would never put them in the pressure canner and if you want to jar stock and soups etc you have to pressure can to preserve them safely. The two brands that I know of that are safe to use for pressure canning are the Ball mason jars and the Fowlers Vacola Jars. I found more infomation about pressure canning with the Ball jars plus I could get them cheaper so that is why I went with them. </span><br />

These are great to add to soups and stews and even in a pasta sauce. A tip if your children dont like mushrooms is to just crush the dried mushroom to powder when you add it to your cooking and they wont even know its there. </span><br />

<span style="font-size: large;">Step 1- For every kilo of figs add half a kilo of sugar and a squeeze of lemon, I think i used 250 mls of lemon all up for the 8 kgs.</span><br />
<span style="font-size: large;">Step 2- mix together with a stick blender</span><br />
<span style="font-size: large;">Step 3- pour as much as you can fit into a stainless steel baking dish and cook in oven at a low temp until it changes in colour, stir when you remember- you might need to do this step a couple of times depending on how big your tray is and how much jam your making.</span><br />
<span style="font-size: large;"> Step 4- pour into sterilised jars and either water bath or pressure can.</span><br />
<span style="font-size: large;">For jams I normally water bath for 10 minutes.</span><br />

It is a Tre spade, and has attachments for mincing, making sausages, and for mincing tomatoes. All I did was cut the tomatoes in half and push them down the shoot, the machine does the rest. It separates the seeds and the skin. After this you can jar the tomatoes up as is. But I prefer to make into a ready to use sauce. No recipe for this but its the same as if you were making a pasta sauce or sauce for pizzas, I always add lots of garlic and red onions and basil. But you can add whatever you like. Then pour into sterilised jars, and either water bath or pressure can or freeze. In previous years I have frozen the sauce but this year I have pressure canned as freezer space is limited.</span><br />

Last year they died or so I thought but when I was weeding this is what I found.</span><br />
